Veggie Day

hmm… I ate entirely vegetarian today. Not on purpose…but not necessarily a bad thing either! Especially when it involves such good eats as today:

Breakfast was 1 C of oatmeal crisp, supplemented with about 1/2 C of  Nature’s Path Millet Rice cereal – good stuff, but a little too hearty to eat on it’s own!

 

For a quick snack this morning, I had some Activia yogurt. Lunch was a repeat of yesterday’s salad, and some leftover homemade pizza. Hello amazing lunch! 

 

Spinach + Goat Cheese + Red Onion + Sunflower Seeds + Canola Oil + Balsamic Vinegar

 

Whole Wheat Crust + Part Skim Mozzarella + Goat Cheese + Green Pepper + Red Onion + Tomato sauce + Oregano

 

Cold pizza is even better than fresh, IMO!

 

Afternoon snack was a Lunabar – which I ate way too quickly and didn’t stop to enjoy 😦

 

But dinner was the highlight of today….

(not a very appetizing picture, but the taste and fillingness more than makes up for it!)

I love recipes that are both delicious AND provide a decent serving size! This recipe makes 8 good sized enchiladas – I had two and was perfectly satisfied – and excited for leftovers tomorrow! 😀

    cold pizza is the best way to eat pizza! (cold vegetable lasagne is also amazing).
